Sweet Chili Glazed Salmon

This easy recipe for salmon filets baked with a buttery sweet chili glaze serves up tender and moist with the perfect blend of sweet, savoury and spice.

Baked salmon goes so well with a side of pasta. I like to pair this dish with penne alla vodka for a winning flavour combination. And both can be cooked up at the same time. Add a side of steamed vegetables or salad and you have a fancy full course meal that’s ready in less than 30 minutes.

Preparing the salmon

A very easy way to cook salmon filets is baked in a hot oven (400 ℉). I’ve had lots of success using this no-fail method with other salmon recipes. I came across the idea for the sweet chili glaze when looking for the right flavour to pair with the penne alla vodka. I had coconut shrimp for lunch served with a Thai sweet chili dipping sauce. The sauce has the right balance of sweet, spicy and savoury which works well with seafood. You will find this sauce in the Asian food section of your supermarket. Or for more variety, visit an Asian grocer.

If you have one large salmon filet, you should divide it up into individual serving portions before cooking it. Doing so, will decrease the cooking time and allow each piece to cook more evenly. Next, apply a non-stick spray to a shallow baking dish then add the salmon to the dish. Season the pieces with salt and pepper then top with slivers of butter before pouring the sweet chili sauce over the salmon.

I like to add some roasted red peppers to the dish as well. They will absorb some of the pan drippings while making a nice addition to the plate. As for any seafood, be careful not to overcook it. When baked to the right doneness, the salmon will turn to an opaque light pink and will be tender, flaky and moist.

Sweet Chili Glazed Salmon

Ingredients
  

  • 12 oz salmon filets (cut into 4 portions)
  • 6 oz roasted red peppers
  • 1 tbsp butter
  • 2 tbsp sweet chili sauce
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Preheat the oven to 400℉.
  • Grease or apply non-stick spray to a shallow baking dish then add the roasted red peppers and salmon filets with the skin side down.
  • Sprinkle the salmon with salt and pepper.
  • Top the salmon with thin slices of butter then drizzle with sweet chili sauce.
  • Bake at 400℉ for about 15-18 minutes (depending on thickness of filets) or until the salmon is flaky and cooked throughout.

Notes

Garnish with parsley. Suggested sides include penne alla vodka, other pasta or rice and mixed steamed or grilled vegetables.
