Having too many ripe bananas around our place poses more of an opportunity than a problem. You can use about 3 larger or 5 smaller bananas that have gotten a bit dark and soft.
This traditional recipe uses common baking ingredients that most cooks will already have on hand. It’s not essential, but consider throwing in some chopped nuts at the end. Just taste one or two ahead to make sure the batch is nice and fresh before adding them to the batter. Good choices include walnuts, almonds or pecans.
Optional toppings
This banana bread is fairly simple to make and is delicious just the way it is. However, some people love it served with a a topping or side. That’s why I prefer to make it plain, so that everybody gets a choice. This could include some icing, smearing with butter, a dollop of cream or à la mode. Here are some suggestions:
- whipped cream
- clotted cream
- coconut pecan icing
- cream cheese icing
- chocolate icing
- vanilla icing
- butter
- ice cream
- crème anglaise
Banana Nut Bread
Ingredients
- 1 cup sugar
- 8 tbsp softened butter
- 2 large eggs
- 1½ cups mashed ripe bananas
- ½ cup milk
- 1 tsp vanilla
- 2½ cups unbleached all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ cup chopped almonds, walnuts or pecans
Instructions
- Preheat oven to 350℉
- Grease a 9x5x3-inch loaf pan
- Cream the sugar and the butter using a mixer until well blended
- Add the eggs, bananas, vanilla and milk and stir until well blended
- Stir in the baking soda, salt and four and blend well
- Stir in the chopped nuts
- Pour the batter into a loaf pan and bake for about 1 hr 15 minutes or until a knife inserted in the center of the loaf comes out clean
