They call this method mantecare la pasta which roughly means creaming the pasta.
To do this, make sure your sauce and pasta are both cooked and ready at the same time. Since you will be dumping the pasta into the sauce pot, make sure you’re sauce is in a big enough pot. Use a strainer to remove the pasta from its pot and don’t rinse it. Stir the pasta into the sauce. Add a little olive oil or butter, which will make your combination smooth and creamy. Garnish with some chopped fresh herbs such as Italian parsley, and serve immediately. Allow your guests to add fresh grated cheese to their plates at the table.
