Ingredients
12large ripe tomatoespeeled and diced
2medium yellow onionspeeled and diced
4applespeeled and diced
2pearsdiced
2peachespeeled and diced
4plumspeeled and chopped
3ribs of celeryfinely chopped
1cupwhite vinegar(5% acidity)
1 ½cupsbrown sugar
3clovesground
2tbsppickling spices wrapped in cheese cloth
2tbsppickling salt
Instructions
In a large saucepan, combine all the ingredients. Bring to a boil over medium heat, stirring constantly. Reduce heat and, stirring often, simmer for 1 hour or until mixture thickens.
Remove the spice bag then distribute in sterilized mason jars. Seal with hot snap lids.
Notes
Yields about 12 cups (3 litres) or about 12, 250 ml jars.
