French Canadian Pea Soup
Yellow peas simmer until thickened in a broth made with ham bone, onions, celery and carrots.

Ingredients

ham bone

cup
chopped ham

large onion
chopped

carrots
diced
2
ribs of celery
diced
3
cups
split yellow peas
2
bay leaves

water
(1 gallon)

tsp
fresh ground black pepper

tsp
sea salt
Instructions
Rinse and drain the peas.
Put all ingredients in a large soup pot with a lid.
Bring to a boil, remove any scum, then allow to simmer with the lid ajar for about 3 hours.
Remove ham bone and scrape off the meat.
Chop up the remaining meat and return to the soup
