Barbecue baked flatbread pizza is the perfect snack at a summer gathering or serve as an individual-size pizza for lunch or dinner.

2 cookie sheets or baking trays
Ingredients
Pizza Capricciosa
2flat breadsnaan, or pita with no pocket
½cupmarinara sauce
½cupcremini mushroomssliced
½cupmarinated artichokechopped
¼cupblack olivespitted and sliced
½cupprosciutto cottoItalian cooked ham
1cupgrated mozzarella cheese
Greek Pizza
2flat breadsnaan, or pita with no pocket
2tbspolive oil
1tsporeganodried
¼tspgarlic salt
¼tspblack pepper
½cupfresh baby spinachchopped
½cuptomatoesdiced
½cupgreen pepperschopped
½cuponionchopped
¼cupolivespitted and sliced
1cupcrumbled feta cheese
Instructions
Preheat your multi-burner gas barbecue to high and close the cover. If you have a thermometer, get the temperature up to about 500℉.
Prepare the topping ingredients.
Line two baking trays with parchment paper.
Place the flatbreads on the trays.
Spread the marinara sauce onto the two capricciosa pizza. Distribute evenly right to the edges of the flatbreads.
Spoon the olive oil onto the two Greek pizzas and spread evenly on the bread right to the edges. Season with oregano, garlic salt and black pepper.
Evenly distribute the appropriate topping ingredients to each of the pizzas. Leave the cheese for last and sprinkle on top.
Reduce the temperature to low on the barbecue burner(s) where you’ll place the cookie sheets and leave the other(s) on high to maintain a temperature of at least 450℉.
Place one tray at a time (with two pizzas) on the rack of the low burner side of the barbecue then close the cover.
Cook for about 8 to 12 minutes, depending on the temperature. Check after about 5 minutes to make sure the underside of the bread is not burning. Turn off the burner(s) directly below the tray if they are starting to burn the bread. They are done when the bread is slightly crisp, lightly toasted on the bottom and the cheese is bubbling.
Notes
Slice with a pizza cutter into wedges if serving as an appetizer for 8 to 10 people or serve whole as an individual pizza for four.
