Picture yourself enjoying a soothing breeze off the Mediterranean as you take refuge from the warm sun along Spain’s southern coast. When having a leisurely lunch in the tourist towns of the Costa del Sol or Costa Blanca you’ll be tempted by the wide variety of seafood. While there are often lots of fried foods on the menu, you can usually be sure to find a nice seafood salad. One of my favourites is the Russian Salad made with tuna and potato. For a litter lighter fare, I’ve subtracted the potatoes but kept all the good lighter ingredients in this recipe. This salad would pair nicely with a chilled Spanish rose wine.
Mediterranean Tuna Salad
This salad has been inspired by salads commonly served along Spain's Mediterranean coast.

Ingredients
- 1 small tin tuna drained
- 1 green onion diced
- 1 tomato diced
- 1 rib of celery finely chopped
- 1 tbs green relish
- 2 tbsp chili sauce
- 3 tbsp mayonnaise
- 6 leaves of Romaine or Bib lettuce rinsed and dried
Instructions
- Mix all ingredients except tomatoes.
- Gently stir in tomatoes and serve over lettuce
Notes
A version of this salad served with cooked diced potato mixed in is known in Spain as Russian salad.
