Salmon with Leek and Pernod

  • 2 salmon filets
  • ½ cup chopped leek or green onion
  • ¼ cup Pernod (or other anise flavoured liquer)
  • Salt and pepper
  • 1 tbsp butter
  1. Preheat oven to 400°
  2. Place salmon filets in greased oven proof dish
  3. Sprinkle with leek, salt and pepper
  4. Pour Pernod over fish
  5. Dab with butter
  6. Cook 25 minutes or vary according to thickness of filet
